Spotted this recipe on the Cropwell Bishop Blue Stilton site ...
Smoked salmon, radish and cucumber salad with blue stilton dressing
Serves 4 as a starter or 2 as a salad
100g Cropwell Bishop Blue Stilton
zest and juice of 1 lemon
200 mls soured cream
2 tblspns extra virgin olive oil
sea salt & freshly ground black pepper
300g smoked salmon
1 cucumber, stripped into ribbons with a potato peeler
10 radishes, trimmed and finely sliced
1 tspns extra virgin olive oil
1 tblspn poppy seeds, lightly toasted
Place the cheese, lemon juice, soured cream, olive oil with some black pepper and a pinch of salt in a blender and blitz for 15 secs until smooth. Spread the salmon in 'waves' over a large platter. Put cucumber ribbons, radishes, and spring onions in a bowl and dress with lemon juice, olive oil and some seasoning. Drizzle dressing over the salmon, then top with the salad before adding a final drizzle and some crumbled CB blue Stilton.
