Some of my favourite recipe ideas for you to try...
So this is how it was ... the fridge was empty (I was waiting for my next home delivery from www.beelocal.co.uk) but I was pretty sure the freezer would help solve my lunch dilemma.
I found a couple of Country Harvest cheese scones which just needed warming in the oven; and I found a half empty packet of frozen sweetcorn.
So, I also grabbed a tub of home-made chicken stock from the freezer, and rescued a can of butterbeans from the larder.
Into the pan I put the sweetcorn, defrosted chicken stock, a couple of cloves of peeled garlic, and the drained can of butterbeans. I cooked this for about 15 minutes, emptied the contents of the pan into the Magimix to liquidise, and returned to the pan with a little milk to dilute.
Hey presto, sweetcorn and butterbean soup with warm cheese scones. SORTED!
